Pumpkin Spice Chocolate Chip Muffins

Time: 20 minutes    Makes: around a dozen

Ingrediants;                                                                                                       

-1 c plus 2 tbsp all-purpose flour

-2 tsp baking powder

-1 tsp cinnamon

-1 tsp pumpkin pie spice

-1/2 tsp nutmeg

-1/4 tsp all spice

-1/4 tsp ground cloves

-pinch salt

-3/4 c granulated sugar

-1/4 c brown sugar, packed

-3/4 c pumpkin puree (not pumpkin pie filling!)

-1/3 c canola oil (can sub. with coconut/vegetable oil, or unsweeted apple sauce to make it oil free -- I haven't tried it but I'm sure that it would work)

-1/4 c milk of choice (I like to use unsweetened almond milk)

-2 tbsp molasses

-1 tbsp vanilla extract

-1 c mini semi-sweet chocolate chips

1.) Preheat oven to 400F. Line muffin tray with muffin cups (if you don’t have muffin cups, you can just spray the pan).

2.) In a large bowl, whisk together flour, baking powder, spices, and salt. Set aside.

3.) In a separate large bowl, whisk together the sugars, pumpkin, oil, milk, molasses, and vanilla until combined.

4.) Pour wet ingredients over dry ingredients, and stir until combined (be careful not to overmix!). Fold in chocolate chips.

5.) Pour batter into prepared muffin tray, filling the cups about ¾ full.

6.) Bake for about 17 minutes. Depending on the size of your muffins and your oven, they may need more/less time (I suggest poking them with a toothpick to make sure they are cooked all the way through!).

7.) Cool and enjoy! ♡
