Chocolate Raspberry Chia Parfait

Time: 4 hours     Serves: 2

Ingredients;                                                                                                      Chia Pudding                                                                                                -3/4 c milk of choice (I used unsweetened almond milk)              -1/4 c chia seeds                                                                                            -1 1/2 tbsp unsweetened cacao powder                                                  -1 tbsp pure maple syrup (sub. agave or honey)                                  -pinch cinnamon & salt

Raspberry Cream                                                                                          -5 tbsp vanilla coconut yogurt (I love the brand SO Delicious)      -handful of fresh raspberries (sub. 2 tbsp raspberry jam if you don't have access to fresh raspberries)

Optional toppings: cacao nibs, chocolate chips, sliced almonds, more raspberries, coconut whipped cream

1.) In a medium mixing bowl, add milk, cacao powder, syrup, cinnamon and salt. Whisk together until all of the powder ingrediants are infused with the liquid ones.

2.) Add chia seeds to liquid mixture. Whisk together until all of the chia seeds are submerged.

3.) Cover chia pudding and place in fridge for 30 minutes. After 30 minutes, stir chia pudding to make sure there are no clumps. Then refrigerate for an additional 3 hours. The chia seeds will absorb a lot of the liquid and become very plump.

4.) In a small mixing bowl, stir together yogurt and raspberries. I find it is best to use a fork for this step, so you can mash the raspberries.

5.) Once chia pudding is set, begin to assemble parfaits. In a glass cup, add a little chia pudding, followed by a little raspberry cream. Repeat these steps as desired and add toppings.
